Tuna Waldorf Pasta Salad

1 cup                uncooked small macaroni shells                          250 mL
1 can                tuna (16 oz./ 184g) in spring water                    1
                       or broth, drained
2 cups              red & green apples, chopped with skin                 500 mL
1 cup                skim milk cheese with cheddar flavouring,            250 mL
                        7% BF, shredded
1 cup                celery, chopped                                              250 mL
½ cup               ultra light mayonnaise                                      125 mL
                        (@24 calories/ Tbsp./ 15mL)
2 Tbsp.             frozen pink lemonade concentrate                       30 mL

1. Cook macaroni until al dente and rinse with cold water. Refrigerate until ready to use.
2. Drain tuna. Flake with fork.
3. Combine apples with lemonade concentrate.
4. Add celery, tuna, cheese, mayonnaise and macaroni.
5. Chill thoroughly. Serve on lettuce lined plates.

Yields 4 servings

1 serving = 1 ½ cups/ 375 mL = 295 calories
