February Recipe

 

Whole Wheat Banana Pancakes

½ cup all purpose flour 125 mL
½ cup whole wheat flour
125 mL
2 Tsp. baking powder 10 mL
1 Tbsp. sugar 15 mL
1/4 Tsp. cinnamon 1 mL
2/3 cup skim or 1% milk 150 mL
½ cup mashed ripe banana (about 1 med.) 125 mL
1 Tbsp. olive, sunflower or safflower oil 15 mL
1 egg (or 2 egg whites) slightly beaten 1
    1. Combine first five ingredients and mix well.

    2. Combine milk, banana, oil and egg.
      Add to dry ingredients. Stir until smooth.

    3. Spray a teflon pan or griddle with Pam.

    4. When heated, spoon 1/4 cup of batter onto hot pan.

    5. Turn when tops are covered with bubbles.

Yields - nine (4") pancakes

1 serving = 2 pancakes
